Large Doors ~ Storefront and Workshop

I am assessing what may be needed to repair or recreate a large hinged store front door. It appears that the one in question has a racked lower panel. It can probably be corrected cosmetically by inserting a triangular piece of wood at the bottom (which runs down off level towards the latch side), then re-fitting the retaining trim. I made an exploded drawing to consider what would be needed to make one from scratch though.
The other is something I need for my own shop. These feature a 30 degree bevel for drainage on all lumber surfaces except the edges.

They will go over a concrete edge a foot high. Cane bolts at the door edges will be used to keep them open as needed.
